  • Lemon chicken tray bake: A classic option is sheet pan lemon chicken. Chicken thighs or breasts roasted with sliced lemon, garlic, olive oil and herbs like thyme or oregano make an easy evening meal. Add chunks of red onion, courgette or cherry tomatoes and you have a full meal in one go. 
  • Plant-based alternative: For a plant-based alternative, swap the chicken for tofu or chickpeas and toss with smoked paprika, garlic and lemon zest before roasting. 
  • Sheet pan fajitas: Sheet pan fajitas are also perfect for a Mexican inspired night at home. Simply slice peppers, onions and your chosen protein such as chicken, beef or mushrooms, coat everything in fajita seasoning and roast until sizzling and slightly charred. 

One pot meals that are easier to clean 

One pot meals do not have to be the dinners your child dreads. You know the moment. “Dad, Mum, what are we having tonight?” You reply, “stew”, and are met with a sigh. Thankfully, one pot cooking has moved on. 

These meals work all year round, not just in winter. From lighter curries to cosy casseroles, they adapt easily to your family’s tastes. Best of all, they do not have to mean a pan that needs soaking overnight just to scrape off the bottom. 

  • Coconut milk-based curries: Curries made with coconut milk are a brilliant place to start. Coconut milk is naturally gentle on pans and helps prevent sticking. Thai green curry or sweet potato and chickpea curry offer a creamy texture with just enough sweetness to appeal to younger taste buds.
  • Tomato-based dishes: Sausage and butter bean stew, lentil and vegetable ragu or a simple chicken and tomato rice dish all clean-up more easily thanks to the acidity of tomatoes. 
  • Creamy one-pot comfort food: If you are craving comfort food without the cleanup, creamy one pot meals are also worth trying. Orzo cooked with chicken, spinach and lemon or a creamy mushroom rice dish cooked slowly with stock and finished with a splash of cream feels indulgent but is surprisingly easy on your pans.
